During their time in Ha Long city, skipper Josh Stickland from Ha Long Bay, Viet Nam team and skipper Hannah Brewis from Washington, DC team got the chance to get involved in making traditional squid cakes, a specialist delicacy of the Quang Ninh province.

A clipper was named “Ha Long Bay – Vietnam” at a ceremony held in London following a cooperation agreement between the Quang Ninh provincial People's Committee and Clipper Ventures on August 29, 2019.

British sailor, Josh Stickland, was named as the Clipper Race Skipper for the team. The host crew gathers about 60 members of different nationalities from 27 to 73 years old. They take turns to compete in different legs.

Hannah Brewis (L) and Josh Stickland (R) bought fresh ingredients in Ha Long fishing market at 4am.
They caught fresh cuttlefishes on a fishing boat.
Ingredients are prepared by hand.
They also experienced pounding squid by hand.
Hannah learns how to make patties.
Making patties seem to be a difficult but interesting task.
The cakes are fried right after the shaping step.
Squid cakes, or chả mực, have a very good smell and look. It took them 4 hours to have finished products.
So tasty are the hand-made squide cakes.
Two skippers took a check-in photo with professional chả mực makers who guided them to make the dish themselves.
